Grease Traps
The Restaurant and Food service Industry is one of our nations largest industries with annual sales expected to reach $537 billion from 935,000 locations in 2007. With the huge growth of commercial food prep. facilities and restaurants comes the challenge of properly handling the waste generated from these facilities.
The EPA has decided that the best way to manage the waste is to fine local municipalities incredible amounts of money for sewer backups caused by Fats, Oil, and Grease (FOG). As a result, local municipalities have been forced to implement more strict regulation concerning the use of grease traps and their maintenance.
Grease traps are used as a form of pretreatment. A properly maintained grease trap separates the FOG from the waste stream before it enters the city sewer system, preventing sewer backups in the city's sewer line. An improperly maintained grease trap fills up with FOG and food causing backups and resulting in offensive odors. More often than not the backup just effects the individual food prep. facility creating a situation that must be fixed before normal operation can resume. It can take hours and even days for the problem to be remedied.

What is proper maintenance?
Proper maintenance is pumping out the entire contents of the grease trap, washing it down and periodically jetting the main lines, on a regular schedule. Most cities with a municipal sewer system have their own rule on grease trap maintenance. For example, the City of St. George requires that all grease traps be pumped a minimum of every 6 months and that a report of compliance is sent to the Pretreatment Coordinator. The Pretreatment Coordinator along with the restaurant management decides on the pumping frequency.
